New yummy recipe! (from clean eating magazine)
Ingredients
1lb eye round beef steak, sliced 1/8 inch thick, then cut into 1-inch strips
1/2 tsp sesame seed oil
1 tbsp unsweetened apple butter
1 tbsp low-sodium soy sauce
1/2 tsp red pepper flakes
2 garlic cloves, crushed
1 1/2 -inch slice fresh ginger, crushed
2 cups sweet potato, diced into 1-inch chunks
1 cup green beans
1 tsp olive oil
1 medium onion, thinly sliced
cooking instructions
* in a large bowl, mix beef with sesame seed oil, apple butter, soy sauce, red pepper flakes, garlic and ginger set aside
* bring 3 cups water to boil in a medium pot over high heat. add sweet potato, cook for 5-7 minutes, until soft but still firm. remove sweet potato with strainer or slotted spoon; do not drain water. return water to a boil. add beans and boil for 4 mins, until soft but still firm. drain
* add olive oil to a large wok or skillet over high heat. once hot, add beef mixture and onion, tossing quickly until done, about 3 or 4 mins. then toss in sweet potatoes and beans. cook 1 more minute.
*Serve and enjoy!

ReplyDeletehi, just found your website - look forward to reading it!!!! just a quick question please - if i do cardio at night (treadmill/crosstrainer for about 50 minutes) what is the best post workout meal to eat bearing in mind i go to bed around 1.5 hours afterwards? i know if doing weights its protein and carbs but not sure if its cardio only. many thanks, Amanda

ReplyDelete1 pound pork tenderloin ( I just buy the small tenderloin from WF)
cut crosswise into 1 inch medallions.
pinch of black pepper
pinch of kosher salt
1/2 TBS extra virgin olive oil (I used flaxseed oil) for the pan
fresh rosemary (about 1 teaspoon)
3 cloves of garlic diced
1 red bell pepper
1 yellow pepper
*2 tsp balsamic vineagar or coconut vineagar if desired
Nice recipe, Thanks for sharing it here. I really want to know on how to cook this with my recipe for stir fry sauce. I hope that I can cook it perfect so that I can make my own recipe.
