The infamous protein (pumpkin) pancake!

Want a healthier albeit very tasty alternative to the traditional pancake? Well read on!
 
Gather up!
 
6 egg whites
3TBSP Pumpkin puree (not pumpkin pie mix)
2 scoops whey protein ( i used BSN lean dessert cinnamon flavor)
2 tablespoons oat flour
1/2 tsp cream of tartar
1/2 tsp sugar free cheescake jello mix
1/4 tsp baking soda
1/4 tsp baking powder
1/4 teaspon vanilla
1/4 tsp cinnamon
sweeten to taste with stevia
 
Non stick cooking spray
 

Directions:
In a bowl, mix all ingredients well.
Heat cooking spray in a large skillet. Pour batter by 1/3 cupfuls into pan. Cook 5-6 minutes on each side or  until pancakes are golden brown on ea. side.
